Raclette tutorial

The Raclette is a famous dish eaten in France, Belgium, Switzerland or Germany.

Raclette is actually a kind of cheese. It is quite fatty and it is very tasty while it is melted.
To eat raclette is very convivial as like in Vietnam with “Lâu” everyone is gathered around the table and share the same dish.

What do you need:

  • A raclette cheese (100g-150g per person)
  • A raclette machine to melt the cheese
  • assorted cooked pork meats
  • steam cooked potatoes
  • gherkins

The Raclette is usually eaten with hot potatoes, assorted cooked pork meats and gherkin.

1/ Once everything is on the table, everybody serves himself. We have to take a little plate, put the cheese on it. Finally we melt the cheese under the raclette machine.

2/ Let melt the cheese a few minute until melt. The cheese has to be like on the picture.

3/ With a scraper (but can even use a knife) scrape the cheese and let it cast on your plate.

Attention, from this step, it exists two schools:

First method: It is the usual method and definitely the classier. We let the cheese cast on the potatoes and the meat.
All the ingredients will be in harmony each other and we can have the pleasure to mix the cheese with either the meat or the potatoes.

Second method: The second method has been introduced to me by my friend Mathieu. Mathieu like to transform his raclette in a nasty purée. The process consists in mixing potatoes meat and a maximum of cheese. The advantage of this method is that even a 5 years old child can eat raclette. The inconvenient is that while the cheese cast delicately on our mates plate, you keep going at crush potatoes to obtain what you can see on the picture…
And he seems proud!
People who eat Raclette this way are likely to be disreputable.

Well, it look really delicious and quite simple to manage ^^, I think I'll try to do it someday.
